The Union of Dairy Agricultural Cooperatives of São Jorge was created in 1986, with six cooperatives (Norte Pequeno; Norte Grande; Santo António; Beira; Santo Amaro; and Manadas) producing traditional cheeses. Later, in 1991, he joined the Rosais Dairy Agricultural Cooperative; Finisterra - Topo Dairy Cooperative in 2000; and, finally, in 2007, a commercial agreement was established with Cooperativa dos Lourais.

Also during 1986, a fundamental step was taken in the production of our cheeses, with the creation of the São Jorge Cheese Demarcated Region and the regulation of the Protected Designation of Origin (DOP) registration attributed to the "Queijo São Jorge" brand. Currently, Uniqueijo groups three cooperatives and a milk collection point, and is dedicated to production; conservation, curing and packaging of São Jorge Cheese, focusing on PDO cheeses with prolonged curing and innovative formats.
