Manual Milking

It is defined as the process of extracting milk from the cow, using a one-legged stand, made of wood, on which the farmer sat and removed the milk, squeezing the cows' teats until he had removed all the milk into a jug. or small can. The milk was then placed in a larger jug ​​to be transported to the factory, using donkeys or carts. Delivered to the factory, it was measured in units of canadas (2.4 liters) and stored, first, in gourds (wooden barrels) and, later, in cans. At the factory, a cloth was used to strain the impurities from the milk before it was added to the vat.

Mechanical Milking

Process of removing milk using milking machines. In this process, teats are inserted into the cows' teats and, through the action of the milking machine's engine, the milk is pumped into a tank in which it is stored, to be transported to the factory in vans. Milkings are done twice a day: in the morning and in the afternoon. In both periods, the milk is delivered to the factory to be processed, respecting a pre-defined schedule.
